Halloween Costumes


I know Halloween costumes in August. Well here's the story I was doing some outlet shopping on the Disney Website for school and Christmas yea it's coming soon you know. Well any ways I found these Princess Pajama's that look like princess dresses that you would buy at Halloween time but here's the best part they are pajama's so the girls can now were them until they grow out of them and they can use them for Halloween.

Dog Racing

Let me elaborate on the Dog Racing. They don't actually catch a coon. The best way to describe it is Cross Country Greyhound Racing. The part Coon Dog is for there ability to track. The part Greyhound is for there speed. No Raccoons are hurt in the racing of these dogs. They have paths that go through the woods that they drag the sent of a raccoon through these paths. This weekend Kenton has $12,700 in Guaranteed Final money.

For some of you who don't know my Parents, Brothers and a few other Family and Friends run Coon dog field Trial dogs. They are a Greyhound coon dog cross and this weekend is the granddaddy of dog races this year is the 53 rd anniversary. Its held in Kenton Ohio.

Weekend and Plans for this Week

Our weekend was a nice weekend. Friday i took the girls to the doctors. Stephanie had to get the last of her shots to start Kindergarten next week. It just does not seem passable that she is going to be five. Ashley and Kaylee both need one shot and we checked there height and weight. Ashley continues to be just one pound heavier then her little sister. Saturday Jim had to work in the morning so I got a start on the zucchini and squash mix for the freezer I got half a dozen made up with another half dozen in the refrigerator to blanch and freeze tonight. I had plans on doing it yesterday but after coming into work for a while and then going shopping and ending up in Jamestown I just didn't get it done. This week should be different I'm taking care of my parents goats and a few dogs not going to the dog race with them in Ohio. So from Wednesday night until Sunday night I get to do chores morning and night. I'm not to sure about the morning chores and still getting ready for work but we will get it done. The evening chores I'll get the kids to help me they like to do them well at least with Grandma and Grandpa they like to help do them. Thursday I'm taking the girls to Elmira Stephanie has to go to the dentist and then were going to go school shopping. Target & Kohl's is in Elmira and I love there clothes for the kids.

The Great Pumpkini's




I think these are neat. Last year at the end of the year we took all the left over zucchini and pumpkins up to my parents and put them next to there pig pen. Well the seeds planted them self and this year my dad told us he had zucchini's growing next to were we put all of the vegetables last year. We ended up with a cross of Zucchini and Pumpkins hence the Great Pumpkini's.

Stuffed Zucchini




Were still getting a lot of Zucchini. I went and purchased a new food processor on Sunday and this week I should get most of it sliced and frozen. On Friday I tried a recipe for Stuffed Zucchini out of the Taste of Home magazine that Grandma Oswald gets us for Christmas every year. One of the things I like the most about it was it was cooked in the microwave no baking so on a hot summer day there was no need to turn the stove on.

4 Medium Zucchini
1 Pound Ground Beef
1/2 cup chopped onion
1 Egg
3/4 cup marinara or spaghetti sauce
1/4 cup seasoned bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup(4 ounces) shredded Monterrey Jack cheese, divided

Additional marinara or spaghetti sauce

cut zucchini in half lengthwise: cut a thin slice from the bottom of each with a sharp knife to allow zucchini to sit flat. scoop out pulp, leaving 1/4 in shells.

place shells in an a microwave safe dish turn of microwave turntable setting. cover and microwave on high for 3 minutes or until crisp-tender: drain and set aside

meanwhile, in a large skillet cook beef and onion over medium heat until mean is no longer pink drain remove from heat stir in the egg, marinara sauce bread crumbs salt and pepper and 1/2 cup cheese

spoon about 1/4 cup into each shell microwave, uncovered on high for 4 minutes. sprinkle with remaining cheese microwave 3-4 minutes longer or until a thermometer inserted into filling reads 160 and zucchini are tender serve with additional marinara sauce.

Zucchini Cookies

With our garden putting out half a dozen zucchinis a day I've been trying all sorts of zucchini recipes this is one of my favorites by far. I did leave the ground cloves out and they still work great. We tried them with both raisins and chocolate chips I did not care for the Chocolate chips in this recipe.

1/2 cup margarine, softened
1 cup white sugar
1 egg
1 cup grated zucchini
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup raisins
DIRECTIONS
In a medium bowl, cream together the margarine and sugar until smooth. Beat in the egg then stir in the zucchini. Combine the flour, baking soda, salt and cinnamon; stir into the zucchini mixture. Mix in raisins. Cover dough and chill for at least 1 hour or overnight.
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop dough by teaspoonfuls onto the prepared cookie sheet. Cookies should be about 2 inches apart.
Bake for 8 to 10 minutes in the preheated oven until set. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely.

Margo Goodridge

I though many of you who read my Blog would like to see this. We will miss you Margo you touched the lives of so many.

Margo E. Goodridge, 64, passed away on Thursday (August 7, 2008) following a courageous 17-year battle with cancer.Mrs. Goodridge was born on March 10, 1944 in Wellsville, to Ervin and Gladys (Cornelius) Vanderhoef. She graduated from Alfred-Almond Central School in 1962. Soon afterward, she married the love of her life, Raymond L. Goodridge, on Sept. 1, 1962.Margo is survived by her husband, Raymond, and their son, Brian D. Goodridge of Andover; a sister, Carolyn (Jerry) Homminga of Rockford, Mich.; her brothers, Leo (Cindy) Vanderhoef of Olean, and Alan (Mary) Vanderhoef of Jacksonville, Fla.; her mother-in-law, Maxine Clark of Wellsville; dear friends, Helena and Richie York of Andover, Don, Peggy, Missy and Katie Frost of Andover; a special niece, Ingrid; as well as several nieces, nephews and cousins; and a large “adopted” family.Margo was a homemaker, gladly devoting her life to her family. She was also a Cub Scout leader, a tee ball coach and a babysitter. She was an avid bowler and thoroughly enjoyed camping. Margo was a loyal friend and loving person who will be greatly missed.
